Instant Oat Idli Mix (High-Fibre & Diabetic-Friendly)
A wholesome Indian recipe crafted for health-conscious eating: nutritious, delicious, and easy to make at home.

Idli is a beloved South Indian breakfast, but traditional recipes require overnight fermentation and refined rice. DietGhar's Instant Oat Idli Mix changes the game: it's a ready-to-use flour blend that yields soft, fluffy idlis in under 30 minutes, with no fermentation needed. By swapping rice with oats and adding urad dal and poha, we boost fibre and protein while keeping the classic taste and texture. Perfect for busy mornings, this mix is a staple for anyone managing blood sugar or simply eating healthier.
Ingredients
How to Make It
Dry roast urad dal in a pan on low heat for 2 minutes until fragrant. Add poha and roast for another minute. Remove from heat and cool completely.
Grind the roasted urad dal and poha to a fine powder in a mixer. Sift the powder to remove coarse bits.
In a large bowl, combine the sifted powder, oats flour, and salt. Mix well.
Transfer the instant oat idli mix to an airtight jar. Store in a cool, dry place for up to a month.
To make idlis: Grease idli plates with oil and heat water in a steamer or pressure cooker (without whistle).
In a bowl, take 1 cup of the idli mix. Add sour curd and mix. Gradually add water, whisking with a wire whisk to make a thick, flowing batter.
Just before steaming, add Eno and mix gently but quickly.
Pour batter into greased idli moulds. Place the moulds in the steamer and steam for 10-12 minutes on medium-high heat.
Insert a toothpick; if it comes out clean, idlis are done. Let them rest for 2 minutes, then unmould with a spoon.
Serve hot with coconut chutney and sambar.

Health Benefits
This instant oat idli mix is a nutritional powerhouse. Oats are rich in beta-glucan, a soluble fibre that helps lower cholesterol and stabilises blood sugar levels. Urad dal adds plant-based protein and essential amino acids. Poha provides easily digestible carbohydrates and iron. The combination is low in fat, high in fibre, and ideal for weight management, diabetes, and heart health. Unlike traditional idlis made with white rice, this version has a lower glycemic index, making it a smart choice for diabetics.
Pro Tips
- →Roast urad dal and poha on low heat to avoid burning; this enhances aroma and shelf life.
- →Sift the ground mixture to ensure a smooth batter and fluffy idlis.
- →Use sour curd for best results; it reacts with Eno to create air pockets.
- →Add Eno just before steaming and mix gently to retain bubbles.
- →Do not overmix after adding Eno; otherwise idlis may become dense.
Variations
- 1Add 2 tbsp of grated carrot or finely chopped coriander to the batter for extra colour and nutrients.
- 2Replace 1/4 cup of oats with millet flour (like foxtail millet) for a different flavour and added minerals.
- 3For a vegan version, substitute curd with 1/4 cup of plant-based yogurt or 1 tbsp lemon juice mixed with water.
