Ingredients
How to Make It
In a large mixing bowl, combine the grated cauliflower, carrot, mashed potato, chopped spinach, boiled peas, green chilies, and grated ginger.
Add the coriander powder, cumin powder, red chili powder, turmeric powder, garam masala, asafoetida, and salt. Mix well until all the spices are evenly incorporated.
Add the whole wheat flour and 1 tablespoon of oil or ghee. Mix everything together with your hands until crumbly.
Gradually add water, a little at a time, and knead into a smooth, soft dough. The vegetables release moisture, so be cautious while adding water.
Cover the dough with a damp cloth and let it rest for 15-20 minutes.
Divide the dough into 8 equal portions and roll each into a ball.
On a lightly floured surface, roll each ball into a circle of about 6-7 inches in diameter.
Heat a tawa or griddle over medium-high heat. Place the rolled paratha on the hot tawa.
Cook for about 1-2 minutes until bubbles appear, then flip. Apply a little oil or ghee on the cooked side.
Flip again and apply oil on the other side. Press gently with a spatula and cook until both sides are golden brown and cooked through.
Repeat with the remaining dough balls.
Serve hot with yogurt, pickle, or a dollop of butter.
