A wholesome Indian recipe crafted for health-conscious eating: nutritious, delicious, and easy to make at home.

Methi Palak Paratha is a wholesome Indian flatbread that combines the earthy bitterness of fenugreek leaves with the mild sweetness of spinach. This version is specially crafted for diabetics and health-conscious individuals, using whole wheat flour and minimal oil to keep it light yet satisfying. The addition of spinach not only enhances the nutritional profile but also balances the flavors, making it a hit with the whole family.
Perfect for breakfast or a quick lunch, these parathas are high in fiber and protein, helping to manage blood sugar levels. Serve them hot with a dollop of curd or a side of low-fat yogurt and pickle for a complete meal.
Ingredients
How to Make It
In a large bowl, combine whole wheat flour, salt, turmeric, red chili powder, cumin seeds, and carom seeds. Mix well.
Add the chopped fenugreek leaves, spinach, green chilies, garlic, and ginger. Mix until the greens are well coated with flour.
Drizzle 2 teaspoons of oil over the mixture and rub it into the flour with your fingertips until it resembles breadcrumbs.
Gradually add water, a little at a time, and knead into a smooth, soft dough. The dough should not be sticky; if it is, add a tablespoon of flour. If dry, add a few drops of water.
Cover the dough with a damp cloth and let it rest for 15 minutes. This helps the flavors meld and makes rolling easier.
Divide the dough into 8 equal portions. Roll each portion into a smooth ball.
Lightly flour a rolling board and rolling pin. Flatten a dough ball and roll it into a circle of about 6-7 inches diameter, using gentle pressure and flour to prevent sticking.
Heat a tawa or griddle over medium-high heat. To check if it's hot enough, sprinkle a pinch of flour; it should brown quickly. Wipe off the flour with a kitchen towel.
Place the rolled paratha on the hot tawa. Cook for about 30 seconds, until small bubbles appear.
Flip the paratha and cook the other side for another 30 seconds. You will see some brown spots.
Drizzle a few drops of oil or ghee around the edges and on top. Flip again and press gently with a spatula to ensure even cooking and crispness.
Cook until both sides are golden brown and have a few blisters. Remove from tawa and keep warm in a casserole or wrap in a clean cloth.
Repeat with the remaining dough balls. Serve hot.

Health Benefits
Methi Palak Paratha is a nutritional powerhouse. Fenugreek leaves (methi) are known to help lower blood sugar levels and improve insulin sensitivity, making them ideal for diabetics. Spinach adds iron, calcium, and antioxidants, supporting overall health. Whole wheat flour provides complex carbohydrates and fiber, which slow down digestion and prevent blood sugar spikes. The use of minimal oil keeps the fat content low, making it suitable for weight management and heart health.
This paratha is also a good source of plant-based protein and dietary fiber, promoting satiety and aiding digestion. The spices like turmeric and cumin add anti-inflammatory benefits. Regular consumption as part of a balanced diet can contribute to better blood sugar control and overall well-being.
Pro Tips
- →To reduce bitterness of methi, soak the leaves in salted water for 10 minutes before chopping.
- →If the dough becomes sticky due to moisture from greens, add a little more flour.
- →For extra softness, add 1 tablespoon of curd or yogurt to the dough.
- →Cook on medium-high heat to get soft parathas with golden spots; cooking on low heat makes them hard.
- →Serve immediately for best taste and texture.
- →You can make the dough ahead and refrigerate for up to 24 hours. Bring to room temperature before rolling.
Variations
- 1Add grated carrots or beetroot for extra color and nutrients.
