A wholesome Indian recipe crafted for health-conscious eating: nutritious, delicious, and easy to make at home.

Medu Vada, the beloved South Indian fritter, gets a healthy makeover in this DietGhar recipe. Instead of deep-frying, we bake the vadas to golden perfection, cutting down on oil while keeping the outside crisp and the inside soft and fluffy. Made with protein-rich urad dal and fragrant spices, these baked medu vadas are perfect for a guilt-free snack or breakfast. Serve them with sambar and coconut chutney for a classic combination that fits your wellness goals.
Ingredients
How to Make It
Rinse the urad dal thoroughly under running water until the water runs clear. Soak it in 2.5 cups of water for at least 4 hours or overnight.
Drain the soaked dal and transfer to a blender. Add 3-4 tablespoons of water and grind to a smooth, fluffy batter. The batter should be thick but spoonable. If it's too thick, add a little more water, one teaspoon at a time.
Transfer the batter to a mixing bowl. Add cumin seeds, crushed peppercorns, curry leaves, onion, green chilies, ginger, asafoetida, coriander leaves, and salt. Mix well.
Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper and lightly grease it with cooking spray.
Wet your palms with water. Take a small portion of the batter (about 2 tablespoons) and shape it into a ball. Flatten slightly and make a hole in the center with your thumb to form a doughnut shape. Place on the prepared baking sheet. Repeat with the remaining batter.
Lightly spray the tops of the vadas with cooking spray.
Bake for 12-15 minutes, then flip carefully and bake for another 10-12 minutes, until golden brown and crisp on both sides.
Remove from oven and let them cool slightly. Serve hot with sambar and coconut chutney.

Health Benefits
Baked Medu Vada is a healthier alternative to the traditional deep-fried version. Urad dal is a rich source of plant-based protein and dietary fibre, which helps keep you full and supports digestive health. Baking eliminates excess oil, reducing the overall fat and calorie content, making it suitable for weight management and heart health. The spices like cumin, pepper, and ginger add flavour and have anti-inflammatory properties. This snack is also naturally gluten-free and can be enjoyed by those with gluten sensitivity.
Pro Tips
- →Soak the urad dal for at least 4 hours to ensure a fluffy batter.
- →Grind the batter in a blender or wet grinder until smooth and airy. A fluffy batter is key to soft vadas.
- →If the batter becomes too watery, add a tablespoon of rice flour or semolina to thicken it.
- →Do not overcrowd the baking sheet; leave space between vadas for even baking.
- →For extra crispiness, you can brush the vadas with a little oil before baking.
Variations
- 1Add grated carrots or beetroot to the batter for a colourful twist.
- 2Replace onions with finely chopped spinach or methi leaves for a different flavour.
- 3For a spicier version, add finely chopped jalapeños or red chili flakes.
- 4Make them in an air fryer: preheat to 180°C and air fry for 10-12 minutes, flipping halfway.
