Soft Ragi Millet Idli: A High-Fibre South Indian Breakfast

Ragi idli brings the comfort of classic steamed cakes with the extra fibre and minerals of finger millet. At DietGhar we keep the batter light, ferment it patiently, and steam just until springy — so each idli stays soft without becoming dense.

This version works well for everyday breakfasts when you want steady energy, better digestion, and a naturally gluten-free plate with chutney or sambar.

Ingredients

Serves 4

How to Make It

1

Rinse idli rice, soak with washed poha for 4–5 hours.

2

Rinse urad dal with fenugreek; soak separately for 4–5 hours.

3

Grind urad dal until fluffy and airy, adding water in small parts.

4

Grind rice–poha to a smooth or lightly grainy batter.

5

Combine both batters. Whisk in ragi flour with enough water for an idli-batter flow.

6

Add salt, mix with clean hands, cover, and ferment overnight until slightly risen and tangy.

7

Gently stir. Grease moulds, pour batter, and steam 12–15 minutes until a toothpick comes out clean.

8

Rest 2 minutes, unmould, and serve hot with coconut chutney or thin sambar.

Health Benefits

Ragi adds calcium and soluble fibre that support gut motility and steadier post-meal glucose compared with refined rice-only batters. Fermentation improves digestibility and adds a mild probiotic edge when the batter is well risen.

💡

Pro Tips

  • →If batter feels thick after adding ragi, loosen with 2–3 tbsp water before steaming.
  • →Winter fermentation: keep the bowl in a warm turned-off oven.
  • →Do not over-steam — idlis toughen past 15–16 minutes.
🔄

Variations

  • 1Fold in finely grated carrot for colour and extra fibre.
  • 2Use 50:50 ragi flour and idli rice flour for a lighter first try.

Frequently Asked Questions

You can add a pinch of fruit salt just before steaming for a quick version, but flavour and digestibility are better with natural ferment.
Usually over-thick batter or over-steaming. Aim for pourable batter and stop at 12–15 minutes.
